Roasted Cauliflower Loaf

Ingredients:
1 Head of Cauliflower
1 Lg Onion
1 pkg Matzo Ball Mix
2 TBSP chopped Dill
2 TBSP chopped Parsley
Olive Oil
Salt 
Milled flaxseed (as an egg substitute, mix 1 TBSP with 3 TBSP water)

Directions:
Roughly chop Cauliflower and onion into med. sized pieces.
Place Cauliflower and Onion in a food processor and process until finely chopped.
Place in bowl.  
Add Dill and Parsely
Add Matzo Mix
Drizzle with olive oil and salt to taste
Add Flax with water mixture
Mix in bowl
Place onto baking pan and bake at 375 for 35 min.  Enjoy!
